Things are still fiercely warm in Jozi, the sun is shining & it’s day 4 of the Kiwi Challenge #14daysofZespriSa – mmmm…. what to do, what to do… Muesli, yoghurt, honey, kiwi… Ja, all delicious, all super healthy but not quite what I felt like… Jam. I was jonesing for jam, cheese & toast like nobody’s business. Little green kiwis – welcome to my 15 minute Kiwi & Granadilla jam. Ja, I said 15 minutes & I said kiwi & granadilla – rad – I know…
Obviously this isn’t a *proper* jam, this is a super speedy, caramalised version. Ain’t nobody got time to stand around, waiting for sugar thermometers & all that. Well I don’t. So if you are also one for all things speedy – step into my *jam* making world, come on… *this ‘jam’ goes a dark caramel colour, yet the fruit still holds up without turning into a pulp full of nothing*
Kiwi & Granadilla 15 Minute Jam
2 kiwi fruit, peeled, roughly chopped
Pulp of 2 fresh granadillas *tinned pulp will also do nicely*
2 tbsp (30ml) honey
1 tbsp (15ml) brown sugar
A spritz of fresh lime
A pinch of ground cinnamon
3 tbsp (45ml) water
This is beyond easy, I feel a little silly calling this a recipe but sometimes it just feels oh so right being a ‘jam rebel’
Basically, you just chuck everything into a small saucepan, bring to a boil, then reduce to a simmer & let it bubble away for 10-12 minutes – or until the fruit has softened slightly, the honey & sugar has caramalised & you are left with fruity stickiness.
Dollop onto ‘I Love You’ toast with a slice or two of cheddar or some goats cheese.
