Wednesday, hump day, that mid-week ‘oh thank sweet sweet cherries there’s only two days to go’ feeling. Wednesday also means… #fiftybuckstofeedfour. I decided to do it a day early because of timetables & such. I went all dude food on the housemates – they weren’t complaining as one of them is an actual dude & the girls in the house (that would be myself & the Sammie’nator) well we eat just about anything. Dudes love beer yes? They love sticky wings yes? They love smashy, crispy tatties yes? & we know, we just know they love crispy onion rings. So. Dude food with a brew for #fiftybuckstofeedfour was born…
CAUTION: The word crispy is said fairly often in this post. Fairly often.
Spoil the okes with this one. Or the okes can spoil their lady because some girls really do like to chow. & like beer. & like crispy, cheesy carbs with their beer…
Sticky, Sticky, Sticky Wings With Smashy, Crispy, Cheesy Tatties & Holey ‘Oh’ Onion Rings *that’s book material right there & you can now take a deep breath – you know it was worth it*
For The Sticky, Sticky, Sticky Wings:
1/2 cup (125ml) *chukney* (that’s chutney)
1/2 cup (125ml) tom sauce (that’s tomato sauce)
Sprinkle Sprinkle of smoked paprika (or the usual kind)
Drizzle Drizzle of Worcestershire Sauce
1/2 tsp (2.5ml) dried chilli flakes
1 packet chicken wings, cut into *winglets*
Magic Maldon & a black pepper burst
Whack that oven up full blast. Combine all ingredients in a large baking dish, add a good amount of that s+p & mix well. Bang into the oven for 25-30 minutes until cooked through & super sticky- almost char like.
Smashy, Crispy, Cheesy Tatties:
4 large tatties, cooked with skins on (boiled till tender)
Super good glug of olive oil
Magic Maldon & black pepper burst
1 tsp (5ml) dried rosemary, or thyme or mixed herbs (whatever you have)
A super scatter of grated Parmesan (use whatever last bit is lurking in the fridge or some cheddar)
With the oven still on full blast – slice the potatoes, place on a baking tray & smash with a fork. Add the o.oil glug, s+p & scatter with herbs. Roast for a good 25 minutes until golden & crispy, then scatter with cheese & pop under the grill till even more crispy, golden, smashy & cheesy.
For the Holy ‘Oh’ Onion Rings – just slice two fatso onions into rings. Combine 1 cup (125ml) flour & 1/2 – 1 cup cold sparkling h20 *you want a smooth consistency* add some s+p & a dash of dried chilli flakes. Dip your rings into the batter & fry in hot oil until puffy & crispy.
Then you just eat everything all together – clever. You also add the beer of your choice into the mix because that doesn’t fall within the meal budget – it is but an extra.
‘Dude Food Means Mood Food’ – that came from the boys mouth – typical. Don’t take his word for it but just know that it was all damn good & all sorts of delicious & all damn good & we licked our fingers.
