Summertime & the living is easy! Well, you should make your life as easy as possible in this heat. Make those mielies on the braai even yummier with a dollop of something creamy, crispy & herby. This is what I used & how I did it…
(Serves 6)
6 mielies (with the husks)
1 tub of plain cream cheese
1 tbsp (15ml) chopped fresh dill
4 tbsp (60ml) pomegranate rubies
Sea salt and freshly ground black pepper
7 rashers of streaky bacon, chopped, fried crisp
1 Pull the husks back from the mielies and twist at the base. Remove any fibres from the mielie kernels and place on a grid, on the braai, over hot coals.
2 Turn the mielies regularly until cooked through and slightly charred and remove from the braai.
3 In a bowl, combine the cream cheese, fresh dill, pomegranate and season well with sea salt and freshly ground black pepper.
4 Top the mielies with the cream cheese just before serving and scatter with crispy bacon.
