Soup. I. Don’t. Like. It. But when Jozi Town decided to follow the winter trend & have a morning of dedicated rain on Women’s Day… Well I woke up craving the stuff. I don’t even know who I am anymore.

A day off work & the sound of fat raindrops against my window meant pillow hugging. But then it stopped. So much for Cape Town winter reminiscing… I still hopped to the shops though & miracle, Food Lovers Market had a special on baba marrows & spring onions. If I was going to eat this soup then it was going to have to be grotesquely green – in a rad kind of way.

The whole baba marrow special meant this pool of green delicious falls head first into the #fiftybuckstofeedfour category – a veggie vibe. In fact, this soup comes in at thuuurdy two rond to be precise. So that’s what…. *need fingers to work this out* 8 bucks per person… 8 – that’s right, right?

Green Soup In A Bowl

1 tbsp (15ml) olive oil

4 spring onions, roughly chopped

2 garlic cloves, roughly chopped

1 green chilli, roughly chopped *minus seeds if sensitive*

1 tsp (5ml) ground cumin

1 punnet baba marrows

3-4 handfuls baba spinach

4 cups vegetable stock

Magic Maldon & black pepper burst

Juice of 2 limes or 1 lemon

1 tbsp (15ml) crunchy peanut butter *I know right? But it does something good*

3 tbsp (45ml) plain yoghurt

Heat the oil in a large pot. Add the spring onions, garlic, chilli & cumin & fry for 1-2 minutes. Add the baba marrows, baba spinach, vegetable stock, season well with Magic Maldon & black pepper burst, lime or lemon juice & bring to the boil. Then reduce the heat & simmer until the marrows are tender. Add the peanut butter & blend using a stick blender, adjust seasoning & stir in the yoghurt.

Add dollops of extra yoghurt & watercress – if you like that sort of thing. You even have cash moneys left over to splash out on some fancy crusty bread. Score.
