New Year. Fresh Start. Couscous Bowl.

New year resolutions. I can quite honestly say I’ve never had any. It simply isn’t my thing. Eating healthily should be something that happens naturally in one’s life. Sometimes, situations sidetrack that healthy eating plan. It happens to the best of us.  I suppose the new year is the best time to get back on track when it comes to food goals. Is this a New Year’s Resolution? Possibly. Whatever the reason for finding that food balance is, this Couscous Bowl is fast, fresh & tasty. Best of all, it tastes even better the next day. Make sure you keep a large bowl of bejeweled salad in the refrigerator for snacking – it beats a piece of toast any day.

This is what I use & how I do it…

4 cups cooked couscous 

3 tbsp olive oil 

A large handful of fresh dill, chopped 

Juice of 3 limes

1/2 cup pomegranate rubies 

Sea salt & ground black pepper

And then… 

In a large bowl, combine the couscous, olive oil, dill, lime juice, pomegranate rubies & season with sea salt & ground black pepper. Mix well. 

Happy couscous bowl munching x
