I’m not ashamed to admit that I have a stash of pre-mix muffin mixes in my kitchen cupboard. My Asha loves a good ol’ bran muffin. But he is also bannanas about bannanas. I love the fact that I can have a fresh batch of muffins sitting on a cooling rack within 30 minutes (time is precious these days). So instead of simply following packet instructions, I add a couple of ingredients into the mix for a bit of a flavour variety. My handy packet of bran muffin pre-mix was turned into Bannana, Oat, Cinnamon & Bran Muffins. They were delicious & devoured by the toddler (which is a win in itself).
This is what I used & how I did it…
1 packet of Bran Pre-Mix Muffin Mix (plus additional packet ingredients)
2 small, ripe bannanas, mashed
4 tbsp (60ml) oats
A sprinkle of ground cinnamon
1 Tip the muffin mixture into a large bowl & add the additional ingredients required, as per packet instructions.
2 Add the mashed bannanas, oats & cinnamon to the mixture – mix well.
3 Spoon into muffin paper cases or cups & bake for 20 minutes at 180 degrees (double check the cooking instructions on your packet).
4 Remove from the oven, cool & then tuck in!
