Granola so good people – granola just so, so good. Granola also be so damn expensive though & for what? Masses of fat & oil & sugar. No. Say no to bad, expensive granola & step into my kiwi granola-filled world – where the people are shiny & happy – because kiwi fruit is good for you & being thrifty & frugal is the norm in my life – most of the time. *I have also said the word granola 5 times in this paragraph – 5* My latest little recipe’ness in the kiwi blogging challenge is… ja, you guessed it – the granola – get involved people – get involved!
2 kiwi fruit, peeled, quartered & chopped
3 cups rolled oats
200g whole almonds
100g shelled pistachios
150g pumpkin seeds
3 tbsp (45ml) brown sugar
2 tbsp (30ml) vegetable oil
2 tbsp (30ml) honey
1/2 tsp (2.5ml) ground cinnamon
1/2 tsp (2.5ml) ground ginger
A sprinkling of Mixed spice
So easy, place the kiwi fruit on a baking tray lined with baking paper & pop into a preheated 200C oven – bake for 15 minutes or until slightly caramalised. Remove from the heat & set aside. *Lower the oven temperature to 180C*. In a large bowl, combine all the remaining ingredients, including the kiwi fruit. Mix well & pour into a large baking dish lined with baking paper. Bake for 20-25 minutes, stirring the granola every 5 minutes so that it gets nice & toasty. The mixture should be golden & dry. Remove from the oven, cool completely & store in glass jars.
*Obviously: tuck in with thick Greek yoghurt, use as a quick crumble topping or just do like I do & eat handfuls of the stuff – straight from the jar*
