There’s A Kiwi On My Stick #14daysofZespriSA

This kiwi challenge #14daysofZespriSA is getting HOT! Nearly as hot as the Jozi weather these days. Forget Spring, hello Summer. That means gym should be on the cards (should) or boxing classes or whatever – those bikinis & swimming pools are calling! But besides all of that, I have a soft spot for icy cold stuffs. Not so much the creamy variety, more the fruity variety. That’s why I went with crushed fruit on a stick for my next kiwi experience – I’m also just a sucker for anything on a stick & I think you’ll be in like with this vitamin C boost….

Kiwi On A Stick 

 2 kiwi fruit, peeled & chopped 

1 tbsp (15 ml) honey

2 cups (500 ml) water

A squeeze of fresh lime

A few sprigs of fresh mint, chopped

*Iced lolly moulds*

*Wooden ice-cream sticks*

Place all ingredients in a jug & using a hand blender, blitz to combine & break the kiwi down just a leeetle bit more. Pour into iced lolly moulds & freeze for 30 minutes or until semi-frozen. After 30 minutes, pop the wooden ice-cream sticks into the lollies & freeze for 2 hours.

*To un-mould, dip a tea towel into warm water & place around the moulds for a few seconds*
